Mickey Gingerbread Cookies Recipe 🎄

Warm spices, molasses, and festive candy decorations make these cookies perfect for Disney fans and holiday baking fun.

Ingredients

  • ½ cup brown sugar
  • 2 tbsp granulated sugar
  • ½ cup butter
  • 1 tsp vanilla extract
  • 1 egg
  • 1/3 cup molasses
  • 3 cups flour
  • 2 tsp cinnamon
  • 2 tsp ginger
  • ½ tsp all spice
  • ½ tsp salt
  • White decorating icing
  • Red and green M&Ms

Directions

  1. Preheat oven to 375°F.
  2. Mix butter, brown sugar, and granulated sugar until just combined. Do not cream the butter.
  3. Add egg, vanilla, and molasses. Mix until just combined.
  4. Add cinnamon, ginger, all spice, and salt.
  5. Gradually add flour until fully incorporated and dough forms.
  6. Transfer dough to a floured surface and roll out evenly.
  7. Cut out Mickey shapes and place on a lined baking sheet.
  8. Bake 9–10 minutes until set.
  9. Allow cookies to cool completely.
  10. Decorate with white icing on the ears and place one red and one green M&M on the icing dots.

Baking Tips

  • Do not overmix the dough for best texture.
  • If sticky, chill dough for 20–30 minutes before rolling.
  • Store in an airtight container for several days.
