Scottish Sweet Rolls Recipe
Soft, buttery rolls with creamy frosting and a cherry on top – a perfect treat for any occasion.
Ingredients
- 1 package active dry yeast
- 1/2 cup warm whole milk
- 5 tbsp bread flour
- 1/4 cup granulated sugar
- 8 whole eggs
- 3 cups plus 1 tbsp bread flour
- 2 tsp salt
- 1 1/2 cup unsalted butter, room temperature
- Eggwash (1 egg + 1 tsp water)
- Rich and creamy vanilla frosting
- Maraschino cherries, halved
- Optional: 1 tsp orange flavoring mixed into 1 cup vanilla frosting for an orange glaze
Instructions
- Preheat the oven to 350°F (175°C).
- Mix yeast, warm milk, and 5 tbsp bread flour. Cover and let sit for 10 minutes.
- Whisk the eggs and granulated sugar in a stand mixer bowl.
- Fit the mixer with a dough hook and add 2 cups bread flour on low speed. Mix, then add salt and remaining bread flour.
- Add butter chunks and knead dough for 2 minutes in the mixer bowl.
- Shape the dough into a ball and let rise covered for 90 minutes in a warm place.
- Punch down the dough and form 12 small rolls (or 24 if serving to children).
- Place rolls on a parchment-lined baking tray, cover, and proof for 30 minutes.
- Brush with egg wash and bake 22-25 minutes until golden brown.
- Cool before icing. Pipe creamy vanilla frosting on each roll and top with half a maraschino cherry.
- Optional: For orange glaze, mix orange flavoring into vanilla frosting, microwave 5-10 seconds if needed, pipe over rolls, and top with cherries.
- Let icing firm (about 10 minutes) before serving.
Tips & Notes
- The dough is very sticky; use a bench scraper if necessary.
- These rolls are large and filling – consider making 24 smaller rolls for kids.
