Souplantation Strawberry Fields Salad Recipe
A refreshing Souplantation summer favorite made at home—fresh greens, sweet strawberries, and homemade caramelized walnuts.
What Was Souplantation?
Souplantation (also known as Sweet Tomatoes) was a beloved buffet-style restaurant known for its fresh soups, salads, baked goods, and seasonal menu items. It became a go-to family dining spot throughout Southern California and across the U.S.
Fan-favorite dishes included their expansive salad bar, creamy soups, freshly baked muffins, and rotating seasonal recipes like the Strawberry Fields Salad. Souplantation permanently closed in 2020, but many of their official recipes remain available for fans to recreate at home.
Strawberry Fields Salad
Makes approximately 10 cups. Vegan & gluten free.
Ingredients
- 2 cups water
- 1/2 cup diced walnuts
- 4 tablespoons white sugar
- 1 1/2 pounds sweetened frozen strawberries
- 2/3 cup balsamic vinegar
- 1 1/2 tablespoons Dijon mustard
- 1 tablespoon kosher salt
- 3/4 teaspoon black pepper
- 3/4 cup canola oil
- 4 cups chopped romaine lettuce
- 4 cups mesclun mixed lettuce
- 1 cup sliced strawberries
- 1/2 cup shredded carrots
- 1/2 cup thinly sliced red onion
- 1/2 cup black raisins
Instructions
- Bring water to a boil in a saucepan and add walnuts. Cook for 30 seconds, then strain.
- Combine walnuts with 2 tablespoons of sugar and stir to coat.
- Place walnuts on a baking sheet and bake at 325°F for 8–10 minutes, until golden. Set aside to cool.
- In a food processor, blend frozen strawberries, balsamic vinegar, Dijon mustard, salt, pepper, oil, and remaining sugar.
- Reserve 1/2 cup of dressing for the salad; store the remaining dressing for later use.
- Toss romaine, mixed greens, sliced strawberries, carrots, red onion, raisins, cooled walnuts, and reserved dressing.
- Serve immediately and enjoy.
