Souplantation Sweet Orange & Cranberry Muffins Recipe

What Was Souplantation?

Souplantation (also known as Sweet Tomatoes) was a beloved buffet-style restaurant known for its fresh soups, salads, bakery items, and seasonal favorites. It was a staple for many families across Southern California and beyond.

Popular menu items included their creamy soups, freshly baked muffins, pizza focaccia, and rotating seasonal recipes. Sadly, Souplantation permanently closed in 2020, but many of their official recipes live on—allowing fans to recreate those comforting flavors at home.

Sweet Orange & Cranberry Muffins

Makes approximately two dozen regular-sized muffins.

Ingredients

Dry Ingredients

  • 3 1/4 cups white flour
  • 2/3 cup wheat flour
  • 1 1/2 tablespoons baking powder
  • 1 teaspoon salt

Wet Ingredients

  • 1 1/4 cups sugar
  • 1 1/2 cups buttermilk
  • 3/4 cup canola oil
  • 1/3 cup cracked eggs
  • 3 tablespoons orange juice concentrate
  • 2 tablespoons orange zest, finely minced

Mix-Ins

  • 1 1/2 cups whole cranberries in sauce

Sugar Topping

  • 3/4 cup brown sugar
  • 1/4 cup powdered sugar

Instructions

  1. Preheat oven to 325°F. Spray muffin pan with non-stick spray.
  2. Combine dry ingredients in a bowl and mix until thoroughly combined.
  3. In a large bowl, mix wet ingredients until the sugar is fully dissolved.
  4. Combine cranberry sauce, dry ingredients, and wet ingredients until just mixed.
  5. Scoop batter into muffin pan using a 2-ounce scoop.
  6. Top each muffin with 1 teaspoon of sugar topping.
  7. Bake for 15 minutes or until lightly golden.
